The Vineyards
The vineyards are located in the South of France,
between Bezier and Montpelier, in the Languedoc
Roussillon area, more precisely in the Cotes de
Thongue just 30 minutes from the Mediterranean
Sea.
The plots were selected for one reason, and that
is because they are known for ‘précose’ or ‘early
ripening.’
Two well-established 20-year-old sites using a
trellis vine growth method and cultivated on clay/
limestone soil, near the village of Alignan Du
Vent, in High Environmental Value (HVE) certified
vineyards managed in a sustainability process.
High Environmental Value (HVE) is a French
environmental scheme which aims to identify
and promote environmentally friendly practices,
biodiversity conservation, plant protection
strategy, water resource management with
minimal pesticide and fertiliser inputs.

The Harvest
The target for the picking was to hit a 11% abv, so our winemaker monitored the maturity closely to have an accurate outcome conducive to reducing overall calories
The harvest took place in mid-August, 10 days
before the main harvest, early in the morning in
order to make the most of the coolness of the
night before going into a direct press for both the
Sauvignon and Rosé.
A slightly gentler press was used on the rosé
in order not to extract too much colour, as we
wanted it to be a lighter, pale colour.

The wines were then aged on lees for 5 months
to provide structure and complexity and beef
up the wine which has worked wonders. On
the Sauvignon specifically, we moved the lees
several times with batonnage during November
to improve flavour, aroma and texture whilst
maintaining the clean and light balance.
The wines have been made as Vegan and
Gluten Free, to make sure they are as clean as
possible and available to more customers dietary
requirements. Nothing artificial has been used
and the process has been refined without any
introduction of animal products.

The Wine Making
A cool fermentation between 15/16° for two weeks followed by a third week at 18/20°, a bit warmer, which together with cultured yeasts ensured all the potential sugar was consumed by the alcoholic fermentation in order to hit our target of zero sugar in the final wines.

The wines are bottled at source, to improve their
quality and sustainability through importation to
the UK. Therefore our wine maker has had their
hands on the product the whole way through the
journey from growing, picking, fermenting and
bottling.
